Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a medium saucepan, combine rinsed rice, coconut milk, water, and salt. Bring to a boil over medium heat, then reduce to low and cover. Simmer for about 15 minutes.
  3. While the rice cooks, peel and dice the mangoes.
  4. After 15 minutes, remove from heat and let sit covered for another 5 minutes. Fluff the rice with a fork and gently fold in the diced mangoes and lime juice.
  5. Serve warm, garnished with fresh cilantro if desired.
