  • 1 medium head of cabbage (about 2 lbs)
  • 3 tbsp extra virgin olive oil
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper (adjust to taste)
  • ½ cup panko breadcrumbs
  • 4 slices of cheese (cheddar or Swiss)
  • 4 whole grain or brioche burger buns

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the cabbage into thick rounds about one inch wide.
  2. Brush each slice with olive oil and sprinkle evenly with garlic powder, paprika, salt, and pepper.
  3. Arrange the cabbage slices on a parchment-lined baking sheet and roast for 25–30 minutes until golden brown.
  4. Sprinkle breadcrumbs over the roasted cabbage slices and return to the oven for an additional 5–10 minutes until crispy.
  5. In the last few minutes of baking, place cheese on top of each slice to melt.
