Spring Green Fattoush is a vibrant salad that bursts with refreshing flavors from crisp vegetables, crunchy pita chips, and a tangy dressing.   • 4 cups romaine lettuce, chopped
  • 1 cup English cucumber, sliced
  • 1 cup radishes, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 medium pita bread, cut into triangles
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • 1 tsp sumac spice
  • Salt and pepper to taste

Instructions

  1. Rinse and chop all vegetables as directed.
  2. Preheat the oven to 375°F (190°C). Arrange pita triangles on a baking sheet, drizzle with olive oil, and toast for about 10 minutes until golden brown.
  3. In a small bowl, whisk together lemon juice, olive oil, sumac spice, salt, and pepper to create the dressing.
  4. In a large bowl, combine the chopped lettuce, cucumber slices, radishes, cherry tomatoes, and herbs. Pour the dressing over the salad and toss gently until coated.
  5. Add the crispy pita chips just before serving to maintain their crunch.
