  • 1 cup cherry tomatoes, halved

  • 2 tbsp aged balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water. In a saucepan, combine with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender.
  2. While lentils cook, heat olive oil in a skillet over medium heat. Sauté red onion for 3-4 minutes until translucent.

  4. In a large bowl, combine drained lentils with sautéed vegetables. Gently mix in basil leaves and season with salt and pepper.
