  • 3 lb chuck roast
  • 4 medium carrots, peeled and cut into chunks
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt & pepper to taste
  • ½ cup red wine (optional)

Instructions

  1. Preheat oven to 325°F (160°C). In a large Dutch oven, heat olive oil over medium heat. Sear the chuck roast on all sides until browned (4-5 minutes per side).
  2. Remove the roast and sauté onions and garlic in the same pot until onions are translucent (3-4 minutes).
  3. Return the roast to the pot; arrange carrots around it. Pour in beef broth until it covers half of the meat. Add red wine if desired, then sprinkle herbs on top.
  4. Cover and bake for about 3 hours or until fork-tender.
  5. For gravy, remove roast after cooking; whisk juices with flour or cornstarch over medium heat until thickened.
