  • 3 tbsp low-sodium soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp toasted sesame oil
  • 1 tbsp vegetable oil (for sautéing)

Instructions

  1. Press tofu for at least 30 minutes to remove excess moisture.
  2. Chop all vegetables into bite-sized pieces.
  3. In a small bowl, whisk together soy sauce, maple syrup, sesame oil, garlic, and ginger.
  4. Heat vegetable oil in a large pan over medium-high heat. Add cubed tofu; cook until golden brown on all sides, about 8–10 minutes.
  5. Add broccoli and bell peppers; stir-fry until vibrant and tender-crisp (about 3–4 minutes).
  6. Reduce heat slightly; pour in the sauce mixture and simmer for an additional 2–3 minutes.
  7. Toss in cashews just before serving; stir well to combine.
