Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt, pepper, and chili powder. Cook in a skillet over medium heat until golden brown, about 5-7 minutes per side. Remove from skillet and let rest.
  3. In a bowl, combine sweet corn, crema or sour cream, half of the cheese, and additional chili powder if desired.
