Instructions

  1. Prepare the gremolata by mixing chopped mint, lemon zest, minced garlic, salt, and pepper in a bowl. Set aside.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add peas, season with salt and pepper, and sauté until tender (3-4 minutes). Remove from pan.
  3. Pat scallops dry and season with salt and pepper. In the same skillet, heat the remaining olive oil over medium-high heat and sear scallops for 2-3 minutes on each side until golden brown.
  4. Gently combine scallops with sautéed peas and half of the gremolata.
  5. Plate immediately, garnishing with the remaining gremolata and freshly cracked pepper.
