Instructions

  1. In a large bowl, whisk together flour, baking powder, cinnamon, and salt.
  2. In another bowl, combine pumpkin puree, eggs, milk, and maple syrup until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. Preheat a non-stick skillet over medium heat and lightly grease it.
  5. Ladle about half a cup of batter onto the skillet and cook until bubbles form on top (about 2-3 minutes). Flip and cook until golden brown (another 2 minutes).
  6. Serve warm with maple syrup or your choice of toppings.
