  • 1 large egg
  • 1 tsp peppermint extract
  • 1/2 cup semi-sweet chocolate chips
  • 2 cups peppermint mocha ice cream

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  2. In another bowl, cream the softened butter with granulated and brown sugars until light and fluffy. Beat in the egg and peppermint extract until well combined.
  3. Gradually add the dry ingredients to the wet mixture, then fold in the chocolate chips.
  4. Drop rounded tablespoons of dough onto lined baking sheets and bake for 10-12 minutes. Let cool on a wire rack.
  5. Once cooled, scoop peppermint mocha ice cream onto half of the cookies and top with another cookie to form sandwiches. Freeze for at least an hour before serving.
