  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, whisk together flour, cocoa powder (if using), and hazelnuts. Set aside.
  3. In another bowl, cream butter and granulated sugar until light and fluffy. Add egg yolk and vanilla extract; mix until smooth.
  4. Gradually combine dry ingredients into wet mixture until a soft dough forms.
  5. Wrap dough in plastic wrap; refrigerate for at least 30 minutes.
  6. Roll out the chilled dough on a floured surface to about 1/4 inch thick. Use cookie cutters to cut shapes, creating holes in half for the classic Linzer look.
  7. Bake for 10-12 minutes or until lightly golden. Let cool completely before spreading Nutella on half of the cookies and sandwiching them with the other halves.
