  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat oven to 325°F (160°C). Line a mini muffin tin with paper liners.
  2. Combine graham cracker crumbs and melted butter in a bowl. Press mixture into each muffin cup to form the crust.
  3. Beat softened cream cheese and granulated sugar until smooth. Add vanilla extract and mix well. Fold in chocolate chips.
  4. Spoon cheesecake filling over each crust until about ¾ full.
  5. Bake for 18-20 minutes until set but slightly jiggly in the center. Let cool completely before topping.
  6. Once cooled, sprinkle mini marshmallows on top and lightly toast them using a kitchen torch if desired.
