  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • ½ cup fresh lemon juice (about 2 large lemons)
  • 1 tbsp lemon zest
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 2 large egg whites

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter in a bowl until crumbly. Press firmly into lined mini muffin tins.
  2. Beat cream cheese and sugar until smooth. Mix in lemon juice and zest until combined. Add eggs one at a time, mixing gently before adding vanilla.
  3. Spoon filling into crusts and bake for 15-18 minutes until set but slightly jiggly in the center. Allow to cool.
  4. Whip egg whites with cornstarch until soft peaks form. Gradually add sugar until stiff peaks form.
  5. Spread meringue on cooled cheesecakes and broil on low for 1-2 minutes until golden brown.
