  • 1 cup unsalted butter, softened
  • 1/4 cup fresh rosemary, chopped
  • 1/4 cup fresh thyme, chopped
  • Zest of 2 oranges
  • Zest of 1 lemon
  • 6 garlic cloves, minced
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • 3 carrots, chopped
  • 2 onions, quartered

Instructions

  1. Preheat the oven to 350°F (175°C). Rinse the goose under cold water and pat dry.
  2. In a bowl, combine the softened butter, minced garlic, herbs, citrus zest, salt, and pepper.
  3. Gently loosen the skin from the breast and rub half of the herb butter mixture under the skin; stuff remaining butter into the cavity along with extra citrus slices and herbs.
