  • 2 tbsp olive oil

  • 2 lbs Yukon Gold potatoes, peeled and chopped
  • 4 tbsp unsalted butter
  • 1/2 cup whole milk
  • 1 lb fresh or baby carrots, sliced
  • 1 tbsp brown sugar

Instructions

  1. 1. Preheat oven to 400°F (200°C). Spray an oven-safe baking dish with nonstick spray. Season chicken breasts with salt and pepper.
  2. 2. In a bowl, combine minced garlic, thyme, rosemary, and olive oil. Rub the mixture over the chicken.
  3. 3. Place chicken in the baking dish and bake for 25-30 minutes until internal temperature reaches 165°F (75°C).
  4. 4. While the chicken bakes, boil potatoes in salted water until tender (about 15-20 minutes). Drain and mash with butter and milk until smooth.
  5. 5. Steam or boil sliced carrots until tender (about 5-7 minutes). In a pan over medium heat, melt butter with brown sugar; toss in carrots to coat.
  6. 6. Serve chicken alongside mashed potatoes topped with glazed carrots.
