Instructions

  1. Hard-boil the eggs: Place eggs in a pot, cover with water, bring to a boil, then turn off heat and let sit for 10 minutes.
  2. Cool and chop: Transfer eggs to an ice bath, cool, peel, and chop finely.
  3. Mash avocados: Halve avocados, remove pits, scoop out flesh into a bowl, and mash until smooth yet slightly chunky.
  4. Mix filling: Combine mashed avocado with chopped eggs, mayonnaise, mustard, lemon juice, salt, and pepper until well blended. Adjust seasoning if necessary.
