  • 1 cup panko breadcrumbs
  • 2 cups fresh romaine lettuce, chopped
  • ½ cup grated Parmesan cheese
  • ½ cup Caesar dressing
  • 4 sandwich buns (ciabatta or brioche)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: olive oil for drizzling

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season chicken breasts with salt, pepper, garlic powder, and paprika.
  3. Dredge each chicken breast in flour, dip into beaten egg, then coat generously with panko breadcrumbs.
  4. Place breaded chicken on the prepared baking sheet and bake for about 25 minutes until golden brown and cooked through (internal temperature should reach at least 165°F).
  5. While chicken bakes, wash and chop romaine lettuce; slice open sandwich buns and drizzle Caesar dressing on both sides.
  6. Once baked, place a crispy chicken breast on each bun, top with romaine lettuce and sprinkle with Parmesan cheese.
  7. Serve immediately with extra Caesar dressing if desired.
