  • 2 cups fresh apples (sliced; Granny Smith or Honeycrisp)
  • 1/2 cup bourbon
  • 1 cup low-sodium chicken broth
  • 1/4 cup Dijon mustard
  • 1 cup heavy cream
  • Salt and pepper (to taste)
  • 1 tsp fresh thyme (or dried)
  • Optional: pinch of cinnamon

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onion until translucent, about 3 minutes; add minced garlic for another minute.
  2. Season chicken breasts with salt and pepper before placing them in the skillet. Cook until golden brown on both sides (6-7 minutes each side), then remove from skillet.
  3. Add sliced apples to the skillet and cook for about 5 minutes until slightly softened.
  4. Pour in bourbon and chicken broth, scraping the bottom of the pan for flavor. Stir in Dijon mustard and let simmer for 5 minutes.
  5. Reduce heat, return chicken to skillet, and gradually stir in heavy cream until heated through, about 3-4 minutes.
