Instructions

  1. In a saucepan over low heat, whisk together heavy cream, whole milk, sugar, and vanilla extract until sugar dissolves (3-5 minutes).
  2. In a small bowl, sprinkle gelatin over cold water and let sit for about 5 minutes until bloomed.
  3. Remove the cream mixture from heat and stir in bloomed gelatin until fully dissolved.
  4. Pour the mixture into ramekins or dessert glasses and chill in the refrigerator for at least 4 hours until set.
  5. For the cranberry sauce, combine cranberry juice, cranberries, lemon juice, and cornstarch in a saucepan over medium heat. Stir frequently until bubbly and slightly thickened (10-15 minutes).
  6. Serve panna cotta topped with cranberry sauce and sprinkled with chopped pistachios.
