  • 4 whole garlic bulbs
  • 1 large onion, chopped

  1. Preheat your oven to 400°F (200°C). Slice off the tops of the garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. In a large pot over medium heat, melt butter and sauté chopped onion until translucent (about 5 minutes).
  3. Add vegetable broth to the pot and squeeze in the roasted garlic cloves. Stir and bring to a simmer.
