  • 1 cup pre-made churros (or homemade churro dough)
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar
  • 1 tbsp cinnamon (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare the churro crust if making from scratch.
  2. In a mixing bowl, beat the softened cream cheese with granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. Once the churro crust has cooled slightly, pour the cheesecake filling over it and smooth the top with a spatula.
  4. Bake for about 50 minutes or until set but still slightly jiggly in the center.
  5. Cool at room temperature before refrigerating for at least four hours.
  6. Before serving, sprinkle generously with cinnamon sugar.
