- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups mixed bell peppers (1 red, 1 yellow, 1 green), sliced
- 1 medium red onion, sliced
- 2 tbsp olive oil
- 2 tbsp fajita seasoning
- 2 cups cooked rice or greens
- Gather all ingredients and chop the bell peppers and onion into bite-sized pieces.
- In a bowl, mix olive oil and fajita seasoning. Coat chicken breasts well and marinate for at least 30 minutes.
