  • 4 salmon fillets (about 6 oz each)
  • 2 ripe peaches, sliced
  • 1/4 cup bourbon
  • 2 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 1 tsp fresh ginger, grated
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a bowl, mix sliced peaches, bourbon, honey, soy sauce, ginger, and lemon juice until combined.
  3. Place salmon fillets in the baking dish and season with salt and pepper. Pour half of the peach bourbon glaze over the fillets.
  4. Bake for 15-20 minutes until the salmon flakes easily with a fork.
  5. With five minutes remaining, drizzle the remaining glaze on top of the salmon.
  6. Serve warm with additional glaze if desired.
