  • 10 corn tortillas

  • 1 cup chopped cilantro (for topping)

Instructions

  1. Prepare the chiles: Remove stems and seeds from guajillo and ancho chiles. Toast lightly in a skillet over medium heat for a few minutes until fragrant.
  2. Blend the sauce: In a blender, combine toasted chiles, garlic, cumin, bay leaves, salt, pepper, and 2 cups of water. Blend until smooth.
  3. Sear the beef: In a large pot or Dutch oven over medium-high heat, sear the beef on all sides until browned (about 5 minutes per side).
  4. Cook together: Pour the blended sauce over the beef and bring to a gentle simmer. Cover tightly and cook on low for about 3 hours or until fork-tender.
  5. Shred the beef: Remove the beef from the pot and shred using two forks.
