Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined. Press into mini muffin tins lined with paper liners.
  3. In another bowl, beat cream cheese and powdered sugar until smooth. Add vanilla extract and sour cream; mix until creamy.
  4. Gently fold in diced apples and cinnamon.
  5. Spoon filling over the crusts in the muffin tins, filling about three-quarters full.
  6. Bake for 18-20 minutes until set around edges but jiggly in center. Cool completely before chilling in the fridge for at least two hours.
