Instructions

  1. Prepare the crepe batter by whisking together flour, eggs, milk, and sugar in a bowl until smooth. Let rest for 30 minutes.
  2. Cook the crepes: Heat a non-stick skillet over medium heat and lightly grease it. Pour about half a cup of batter into the skillet; cook until edges lift (about 2 minutes), then flip and cook for another minute. Repeat until all batter is used (yielding about ten crepes).
  3. Make the coffee mixture by combining brewed coffee with sugar in a small bowl until dissolved.
  4. Prepare the cream filling by beating mascarpone and heavy cream together until fluffy peaks form.
  5. Assemble the cake by layering each crepe on a serving plate, brushing each layer with the coffee mixture, and spreading cream filling in between. Continue stacking until all are used.
  6. Chill: Cover and refrigerate for at least two hours or overnight before serving. Dust with cocoa powder before slicing.
