Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs with melted butter; press firmly into the bottom of the pan. Bake for 10 minutes until golden.
  3. Melt white chocolate chips in a microwave-safe bowl in short bursts until smooth; let cool slightly.
  4. Mix cream cheese and sugar in a large bowl until creamy. Add eggnog and vanilla extract; combine well.
  5. Gently fold in melted chocolate until fully incorporated.
  6. Pour filling over the cooled crust and bake for 30-35 minutes until set but still slightly jiggly in the center.
