  • 1 cup cooked rice (brown or white)
  • 1 cup shredded mozzarella or cheddar cheese
  • 1 cup tomato sauce (canned or homemade)

  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. In a skillet over medium heat, brown the ground meat until fully cooked (5-7 minutes). Add chopped onions and sauté until translucent.
  3. Stir in cooked rice, tomato sauce, garlic powder, oregano, cumin, salt, and pepper. Cook for an additional 3-5 minutes until heated through.
  4. Stuff the prepared bell peppers with the meat-rice mixture and place them upright in a baking dish.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil, sprinkle cheese on top of each pepper, and bake uncovered for an additional 10-15 minutes until bubbly and golden brown.
