  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup cooked rice or quinoa
  • 1/2 cup tahini
  • Juice of 1 lemon
  • Fresh parsley or cilantro, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C). Toss cauliflower florets with olive oil, garlic powder, cumin, paprika, salt, and pepper in a bowl.
  2. Spread the seasoned cauliflower on a baking sheet lined with parchment paper. Roast for 25–30 minutes until golden brown and crispy.
  3. While the cauliflower roasts, cook rice or quinoa according to package instructions. Fluff once done.
  4. In a small bowl, whisk together tahini, lemon juice, and water until smooth.
  5. Assemble your bowls by layering grains at the bottom, topped with roasted cauliflower and drizzled with tahini sauce. Garnish with chopped herbs and sliced avocado if desired.
