  • 2 tbsp Extra Virgin Olive Oil

Instructions

  1. Hard-boil the eggs by placing them in cold water, bringing to a boil, then covering for 10-12 minutes. Cool in an ice bath.
  2. Season the salmon with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook the salmon for 4-5 minutes per side until golden brown.
  3. Blanch green beans in boiling water for 3-4 minutes until tender-crisp. Rinse under cold water.
  4. Assemble the salad by layering mixed greens on a platter and topping with sliced eggs, cherry tomatoes, green beans, olives, and flaked salmon.
  5. Whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper for dressing; drizzle over the salad before serving.
