  • 4 cups beef broth
  • 1/2 cup red wine
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. In a large pot over medium-high heat, heat olive oil and sear the lamb shoulder until browned on all sides.
  2. Add chopped onions and minced garlic; sauté until onions are translucent (about 5 minutes).
  3. Stir in diced carrots and potatoes along with thyme and rosemary; cook for an additional 3 minutes.
  4. Pour in beef broth and red wine, scraping any brown bits from the bottom. Bring to a gentle simmer.
  5. Reduce heat to low, cover, and simmer for 1.5 to 2 hours until lamb is fork-tender.
  6. Before serving, taste and adjust seasoning with salt and pepper.
